Green Basque Gastronomy

This project is a collection of buildings located on Zorrotzaure island in Bilbao, Spain which are tied together with the purpose of developing vegetarian Basque cuisine through local food production, culinary school, a market and a restaurant overlooking the terrain. The project incorporates integrated design, adaptive reuse, and energy retrofitting.

During the retrofit three industrial buildings were transformed. A paper recycling facility was turned into a culinary school for Basque Gastronomic Societies and a commercial kitchen servicing a newly designed restaurant space. The energy retrofit incorporated the installation of additional fabric and building services that would be sufficient for cooking.

The other industrial buildings were transformed into a market space split by a greenhouse to allow for more food production variety through the seasons. The greenhouse was designed to be multilevel, which required a unique adaptation of the steel trusses from an existing building neighbouring the site. The market space had also undergone energy retrofitting that includes new fabric installation and replacement of the building services systems.

Short Section

The restaurant design allowed for the preservation of the existing trees on site through the creation of the courtyard as well as allowed for water collection due to the shape of the roof.

Restaurant Structure

The design of the restaurant structure incorporates reused materials from the site as well as timber structures and finishes to minimise embodied carbon through the use of local materials.

Long Environmental Section

The design of all buildings is based on passive strategies such as natural ventilation, use of thermal mass, heat exchange, and maximisation of daylight to minimise operational carbon of the facilities.

Site Views

They allow the viewer to experience the journey taken on site. From food collection on the ground, greenhouse, and the market, to the culinary school or the restaurant.

Adaptive Reuse vs New Structures

The retrofit process consisted of adaptive reuse of existing structures and building materials on site. Most building structures were part of the adaptive reuse, while the building fabric was designed to maximise the use of existing materials.
